I love cooking a whole chicken in the crockpot.  It is easy, serves as a great source of lean protein for meals throughout the week and provides an opportunity to make homemade chicken broth.  I make a batch a couple of times a month, and freeze it to use in recipes. I prefer to make slow cooker chicken broth, as opposed to buying broth from the store. As a matter of fact, I have listed a few reasons below on why I make my broth now.

Homemade Chicken broth is much healthier than pre-made chicken broth that you purchase in the store.  Most store bought chicken broths have taken the nutritional value out of chicken broth by adding extra additives, including sodium and MSG.  Below are a few more reasons to make your own broth.

1) It is more Nutritious– the bones are full of calcium and other minerals. Minerals from the bones are transferred directly to the water, which in turn turns into broth.  We absorb the nutrients into our body when we consume it.

2) It boosts the immune system.

3) It promotes healthy digestion and nail growth.-homemade broth contains gelatin, which store bought broths and bouillon do not.  Gelatin is beneficial in sealing your gut, promoting healthy digestion, hair and nail growth.

4) Aids in reduction of joint pain and inflammation– the boiled down cartilage releases chondroitin sulphates, glucosamine, and other compounds

5) It is cost effective.  This week I purchased a whole chicken for approximately $7.00.  One chicken provides enough meat for several meals throughout the week and over 4 quarts of fresh chicken broth.

How to make slow cooker chicken broth

Recipe

Ingredients:

  • 1 whole chicken, preferably organic
  •  1 onion, diced
  • 2 garlic cloves, chopped
  • carrots and celery, if you prefer

Directions:

  1. Cook your chicken in the crockpot.  Follow my perfect whole chicken in the slow cooker recipe.
  2. Save the chicken for your weekly recipes, or freeze for later.
  3. Once the meat has been removed, throw the leftover chicken carcass back into the crockpot and add veggies.
  4. Fill your crockpot to just below the top with water and cook on low for 12 hours.  I usually let it cook all night.
  5. Once it has been cooked, strain the broth through a colander or cheese cloth.
  6. I divide the slow cooker chicken broth into 1 and 2 cup increments and freeze.  It provides a great source for soups, stews and other recipes. Enjoy!

Can you believe how easy it is to have fresh, homemade broth?  Most of the time I make my own vegetable broth as well.  You cannot go wrong with having a fresh supply in your freezer.  When the recipe calls for broth, simply thaw it out and use it for your recipe.

As I mentioned above, I portion my homemade chicken broth.  I divide it into one and two cup increments.  I also fill a ice cube tray with smaller 2 oz. portions as well.

  • 1 whole chicken (preferably organic)
  • 1 whole onion (diced)
  • 2 cloves garlic (chopped)
  • 2 whole carrots (diced)
  • 2 stalks celery (diced)
  1. Cook your chicken in the slow cooker. Recipe here.

  2. Remove meat and save for your weekly recipes or freeze for later.

  3. Once the meat has been removed, put the leftover carcass and bones back in the slow cooker. Add veggies

  4. Fill your slow cooker with water, just to the top.  Cook on low for 12 hours.

  5. Let it cool in the refrigerator. Once it has cooled, strain your broth through a cheesecloth or strainer 

  6. Portion your slow cooker chicken broth into 1 and 2 cup increments and freeze.

  7. Pull it out and thaw it as needed.
